Creamy Shrimp Alfredo Pasta

8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

3 tbsp olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1/2 cup unsalted butter

1 tsp Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon zest (optional, for garnish)

Instructions
 

Cook the Pasta:

    Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

      Sauté the Shrimp:

        In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the shrimp and season with salt and pepper. Sauté for about 3-4 minutes or until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set them aside.

          Prepare the Alfredo Sauce:

            In the same skillet, add the remaining tablespoon of olive oil along with the minced garlic. Cook for about 1 minute until fragrant, being careful not to burn the garlic. Then, add the butter and let it melt completely.

              Add Cream and Cheese:

                Slowly pour the heavy cream into the skillet, stirring to combine. Bring it to a gentle simmer. Gradually whisk in the Parmesan cheese until fully melted and the sauce is creamy. If the sauce seems too thick, add a bit of the reserved pasta water until you reach the desired consistency.

                  Combine Everything:

                    Stir in the Italian seasoning, and season with additional salt and pepper if needed. Add the cooked fettuccine and shrimp back to the skillet, tossing everything together until the pasta is well coated with the Alfredo sauce.

                      Serve:

                        Plate the creamy shrimp Alfredo pasta, garnishing with chopped fresh parsley and a sprinkle of lemon zest for a refreshing touch.
