Ingredients

1 cup canned chickpeas (drained and rinsed)

1 medium roasted red pepper (jarred or homemade)

1/4 cup tahini

2 tablespoons olive oil

1 garlic clove (minced)

2 tablespoons lemon juice

1/2 teaspoon ground cumin

Salt to taste

Water (as needed for consistency)

Fresh parsley (for garnish)

Pita chips or vegetable sticks (for serving)

Instructions

Prepare the Red Pepper: If using a jarred roasted red pepper, drain it and set aside. If you prefer homemade, you can roast a fresh red pepper over an open flame or in the oven until charred, then place it in a paper bag to steam, peel off the skin, and remove seeds.

Blend the Base: In a food processor, combine the drained chickpeas, roasted red pepper, tahini, minced garlic, olive oil, lemon juice, ground cumin, and a pinch of salt.

Process Until Smooth: Blend the mixture on high until it reaches a creamy consistency, scraping down the sides as necessary. If the hummus is too thick, gradually add water, one tablespoon at a time, until you achieve your desired creaminess.

Taste and Adjust: After blending, taste the hummus and adjust the seasoning with more salt, lemon juice, or ground cumin, if desired.

Serve: Transfer the hummus to a serving bowl, make a small well in the center, and drizzle with a bit of olive oil. Garnish with freshly chopped parsley.

Enjoy: Serve with pita chips, fresh vegetable sticks, or as a spread in wraps and sandwiches. Enjoy your creamy roasted red pepper hummus!
