3 large red bell peppers

1 tablespoon olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Roast the Peppers: Preheat your oven to 450°F (230°C). Cut the bell peppers in half, remove stems and seeds, and place them cut-side down on a baking sheet. Roast for about 20-25 minutes until the skins are charred and the peppers are soft. Remove from the oven and let them cool for a few minutes. Once cool, peel off the skins and chop the peppers roughly.

    Sauté the Aromatics: In a medium skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5-7 minutes, until translucent. Add the minced garlic and cook for an additional minute until fragrant.

      Blend the Sauce: In a blender or food processor, combine the roasted peppers, sautéed onions and garlic, heavy cream, smoked paprika, and dried oregano. Blend until smooth.

        Cook the Sauce: Pour the blended mixture into the skillet and cook over low heat, stirring often. Add the grated Parmesan cheese, salt, and pepper to taste. Continue cooking for about 5-7 minutes until the sauce is heated through and slightly thickened.

          Serve and Garnish: Remove from heat and let it cool slightly. Serve the creamy roasted pepper sauce over your favorite pasta, grilled chicken, or used as a dipping sauce. Garnish with fresh basil if desired.
