Creamy Roasted Garlic Pasta

1 head of garlic

12 oz (340g) pasta (fettuccine or your choice)

2 tbsp olive oil

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup vegetable or chicken broth

1 tsp salt

½ tsp black pepper

½ tsp red pepper flakes (optional, for heat)

2 cups fresh spinach

¼ cup fresh parsley, chopped (for garnish)

Lemon zest (from 1 lemon, optional for brightness)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Cut the top off the head of garlic to expose the cloves. Drizzle with 1 tbsp of olive oil, wrap in aluminum foil, and roast for about 30–35 minutes, until the cloves are soft and caramelized. Let it cool slightly, then squeeze the cloves out into a bowl and mash them with a fork.

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

      Prepare the Creamy Sauce: In a large skillet over medium heat, add 1 tbsp of olive oil. Once hot, add the mashed roasted garlic and cook for 1–2 minutes until fragrant. Pour in the broth and bring to a simmer.

        Add Cream and Cheese: Lower the heat and stir in the heavy cream slowly, then add the grated Parmesan cheese. Stir continuously until the cheese is melted and the sauce is smooth. Season with salt, black pepper, and red pepper flakes if using. If the sauce is too thick, gradually add some reserved pasta water until desired consistency is reached.

          Incorporate Pasta and Spinach: Add the cooked pasta directly into the skillet with the sauce. Toss to coat the pasta evenly. Add the fresh spinach and cook for an additional 2–3 minutes until wilted. Check for seasoning and adjust if necessary.
