Ingredients

1 cup orzo pasta

1 whole head of garlic

2 tablespoons olive oil

2 cups vegetable broth

1 cup heavy cream

½ cup grated Parmesan cheese

1 teaspoon onion powder

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

½ cup cherry tomatoes, halved (optional)

Instructions

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the head of garlic to expose the cloves. Drizzle with 1 tablespoon of olive oil, wrap in aluminum foil, and bake for 30-35 minutes until the cloves are soft and caramelized. Let cool before squeezing the roasted garlic into a bowl.

Cook the Orzo: In a medium saucepan, bring the vegetable broth to a boil. Add the orzo, reduce the heat to medium, and cook according to the package instructions (usually about 8-10 minutes) until al dente. Stir occasionally and watch for any necessary adjustments to the liquid.

Make the Creamy Sauce: In a large skillet over medium heat, add the remaining tablespoon of olive oil. Stir in the roasted garlic, onion powder, and garlic powder, cooking for about 1-2 minutes until fragrant.

Combine Ingredients: Pour in the heavy cream and let it simmer for 2-3 minutes. Add the grated Parmesan cheese, stirring until melted and combined. Season with salt and pepper to taste.

Toss the Orzo: Once the orzo is cooked, drain any excess broth and add it to the skillet with the creamy sauce. Gently toss to combine, ensuring all the orzo is coated with the sauce. If desired, toss in halved cherry tomatoes for a pop of color and fresh flavor.

Serve: Plate the creamy roasted garlic orzo, garnish with freshly chopped parsley, and enjoy warm.
