1 medium head cauliflower, chopped into florets

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and black pepper, to taste

½ cup cream cheese, softened

¼ cup Greek yogurt (or sour cream for a richer taste)

¼ cup grated Parmesan cheese

2 tablespoons fresh lemon juice

2 tablespoons chopped fresh chives (for garnish)

Optional: a pinch of red pepper flakes (for heat)

Instructions
 

Preheat the oven: Preheat your oven to 425°F (220°C).

    Prepare the cauliflower: In a large bowl, toss the cauliflower florets with olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper until well-coated.

      Roast the cauliflower: Spread the seasoned cauliflower on a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes, or until the cauliflower is golden brown and fork-tender. Stir halfway through cooking for even roasting.

        Blend the dip: Once the cauliflower is roasted, allow it to cool for a few minutes. Transfer it to a food processor and add softened cream cheese, Greek yogurt, Parmesan cheese, and lemon juice. Blend until smooth and creamy, scraping down the sides as needed. Taste and adjust seasoning with more salt, pepper, or lemon juice if desired.
