1 lb (450g) chicken breast, diced

2 cups fresh mushrooms (such as cremini or shiitake), sliced

1 medium onion, finely chopped

2-3 cloves garlic, minced

4 cups chicken broth

1 cup dry white wine (like Sauvignon Blanc)

1 cup grated Parmesan cheese

1 cup heavy cream

1 tablespoon olive oil

1 tablespoon butter

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Broth: In a saucepan, heat the chicken broth over low heat to keep it warm throughout the cooking process.

    Cook the Chicken: In a large skillet or pot, add the olive oil and butter over medium heat. Once hot, add the diced chicken breast. Season with salt and pepper. Cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
