8 oz (about 225g) spaghetti or fettuccine

2 tablespoons olive oil

3 cloves garlic, minced

4 cups fresh spinach, chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

Zest and juice of 1 large lemon

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

Fresh basil or parsley for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté Garlic: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

      Add Spinach: Stir in the chopped spinach and cook, stirring occasionally, until wilted, approximately 3-4 minutes.

        Create the Sauce: Reduce the heat to low. Pour in the heavy cream and mix well. Add the grated Parmesan cheese, lemon juice, lemon zest, and red pepper flakes (if using). Stir until the cheese melts and the sauce becomes creamy.

          Combine Pasta and Sauce: Add the drained pasta directly into the skillet. Toss to combine, adding reserved pasta water a little at a time until you reach your desired creamy consistency.

            Season: Season with salt and black pepper to taste.

              Serve: Plate the pasta and garnish with additional Parmesan, fresh basil or parsley, and a sprinkle of lemon zest for an extra zing.
