Creamy Lemon Kale Pasta with Crispy Crumbs

Pasta:

12 oz (340g) spaghetti or fettuccine

Sauce:

1 cup heavy cream

1 cup vegetable or chicken broth

1/2 cup grated Parmesan cheese

1 large lemon (zest and juice)

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper to taste

Greens:

4 cups kale, stems removed and chopped

Crispy Crumbs:

1 cup panko breadcrumbs

2 tablespoons butter

1/2 teaspoon garlic powder

1 teaspoon dried thyme

Salt and pepper to taste

Garnish:

Fresh parsley, chopped (for serving)

Extra Parmesan cheese, for serving

Instructions
 

Cook the Pasta:

    Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

      Prepare the Crispy Crumbs:

        In a medium skillet, melt the butter over medium heat. Add panko breadcrumbs, garlic powder, thyme, salt, and pepper. Cook the mixture, stirring frequently, until the breadcrumbs are golden brown and crispy, about 3-4 minutes. Remove from heat and set aside.

          Sauté the Kale:

            In the same skillet, add olive oil and minced garlic over medium heat. Sauté for about 1 minute, or until fragrant. Add the chopped kale and a pinch of salt. Cook until the kale is wilted and tender, about 5-7 minutes. Remove from pan and set aside.

              Make the Creamy Sauce:

                In a large skillet, combine the heavy cream, vegetable broth, lemon zest, and lemon juice. Bring to a gentle simmer over medium heat. Stir in the Parmesan cheese, mixing until melted and smooth. Season with salt and pepper to taste.

                  Combine Everything:

                    Add the cooked pasta and wilted kale to the creamy sauce. Toss gently to combine, adding reserved pasta water a little at a time until you reach your desired consistency.

                      Serve:

                        Divide the creamy lemon kale pasta among serving plates. Top generously with crispy crumbs and a sprinkle of fresh parsley. Add extra Parmesan if desired.
