Creamy Lemon Artichoke Pasta

12 oz linguine or fettuccine pasta

1 can (14 oz) artichoke hearts, drained and quartered

1 tablespoon olive oil

3 cloves garlic, minced

1 cup heavy cream

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon ground black pepper

1/2 teaspoon salt (to taste)

1/2 cup grated Parmesan cheese

1/4 cup fresh basil leaves, chopped (plus extra for garnish)

Optional: Red pepper flakes for a spicy kick

Cook the Pasta: Bring a large pot of salted water to a boil. Add the linguine or fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté the Garlic: In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the minced garlic and sauté for about 1-2 minutes until fragrant and lightly golden, ensuring it doesn’t burn.

      Make the Creamy Base: Reduce the heat to low and pour in the heavy cream. Stir continuously until the cream is warmed through. Add the lemon zest, lemon juice, ground black pepper, and salt. Mix well to combine.

        Incorporate Artichokes: Gently add the quartered artichoke hearts to the cream mixture. Allow them to warm through for about 3-4 minutes, stirring occasionally.

          Combine Pasta and Sauce: Gradually mix in the cooked pasta, tossing to coat in the creamy lemon sauce. If the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency.

            Final Touches: Lower the heat and stir in the grated Parmesan cheese until melted and well combined. Add fresh basil and mix well. Taste and adjust seasoning as necessary.
