Simmering is a crucial step in the process of making Garlic Lovers' Creamy Parmesan Pasta. This method allows the flavors to meld beautifully while thickening the sauce to a luxurious, creamy consistency. When you simmer the sauce, aim for a gentle bubble rather than a vigorous boil. This low and slow approach helps the cream reduce gradually, enhancing the sauce's richness without risking separation or curdling.

Ingredients

8 oz fettuccine or spaghetti

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: Red pepper flakes for heat

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine or spaghetti and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set aside.

Sauté Garlic: In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for 1-2 minutes, until fragrant and lightly golden. Be careful not to burn the garlic.

Create the Sauce: Lower the heat and pour in the heavy cream, stirring continuously to combine. Let it simmer for 2-3 minutes until it thickens slightly.

Add Cheese and Spices: Gradually whisk in the grated Parmesan cheese until melted and creamy. Season with garlic powder, Italian herbs, salt, and pepper. If you want a bit of heat, sprinkle in red pepper flakes at this stage.

Combine Pasta and Sauce: Add the drained pasta to the sauce, tossing to coat evenly. If the sauce is too thick, gradually add reserved pasta water until desired consistency is achieved.

Serve: Plate the pasta and garnish with freshly chopped parsley. Add additional Parmesan cheese and red pepper flakes on top if desired.
