12 oz fettuccine pasta

2 tablespoons olive oil

4 cloves garlic, minced

16 oz fresh mushrooms, sliced (such as cremini or button)

1 teaspoon dried thyme

1 teaspoon dried oregano

1 cup vegetable or chicken broth

1 cup heavy cream

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta:

    - Bring a large pot of salted water to a boil. Cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.
