4 salmon fillets (6 oz each)

2 tablespoons olive oil

Salt and pepper, to taste

4 tablespoons unsalted butter

4 cloves garlic, minced

1 cup heavy cream

1 cup fresh spinach, chopped

1 teaspoon lemon zest

2 tablespoons fresh lemon juice

1 teaspoon dried oregano

Fresh parsley, for garnish

Lemon wedges, for serving

Prepare the Salmon: Season the salmon fillets with salt and pepper on both sides. Heat olive oil in a large skillet over medium-high heat. Once hot, add the salmon fillets and cook for about 4-5 minutes on each side or until golden brown and cooked to your desired doneness. Remove the salmon from the skillet and set aside on a plate.

    Make the Garlic Butter Sauce: In the same skillet, reduce heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 1-2 minutes until fragrant (be careful not to burn the garlic).

      Create the Creamy Mixture: Pour in the heavy cream and stir well. Add the lemon zest, lemon juice, and dried oregano. Let the mixture simmer for about 5 minutes, stirring occasionally, until it thickens slightly.

        Add Spinach: Mix in the chopped spinach and cook until it wilts down, about 1-2 minutes. Taste and adjust seasoning with additional salt and pepper if necessary.

          Combine Salmon with Sauce: Gently place the cooked salmon fillets back into the skillet, spooning some of the creamy garlic sauce over the top. Cook for an additional 2 minutes, allowing the salmon to soak in some of the flavor.
