Ingredients

1 large cucumber, grated and excess moisture squeezed out

1 cup plain Greek yogurt

1 tablespoon fresh dill, finely chopped (or 1 teaspoon dried dill)

1 clove garlic, minced

1 tablespoon lemon juice

1 teaspoon olive oil

Salt and pepper to taste

Optional: a pinch of red pepper flakes for a kick

Instructions

Start by preparing the cucumber. Grate the cucumber using a box grater and then press it in a clean kitchen towel or cheesecloth to remove as much moisture as possible. This step is crucial for preventing a watery dip.

In a medium-sized mixing bowl, combine the Greek yogurt, chopped dill, minced garlic, lemon juice, and olive oil. Stir well to combine all the ingredients smoothly.

Add the grated cucumber to the yogurt mixture, incorporating it evenly throughout.

Season with salt and pepper to taste. If you like a bit of heat, add a pinch of red pepper flakes at this stage.

Refrigerate the dip for at least 30 minutes to allow the flavors to meld together.

Serve chilled with your favorite dippers like pita chips, fresh veggie sticks, or even as a spread on sandwiches.
