2 large cucumbers, peeled and roughly chopped

2 ripe avocados, halved and pitted

1 cup Greek yogurt (or vegan alternative)

1 cup vegetable broth (chilled)

2 tablespoons fresh lime juice

1 tablespoon olive oil

1 clove garlic, minced

1 teaspoon fresh dill (or ½ teaspoon dried dill)

Salt and pepper to taste

Optional: sliced radishes and microgreens for garnish

Instructions
 

Prepare the Ingredients: Peel and roughly chop the cucumbers. Halve the avocados and remove the pits. Mince the garlic.

    Blend the Base: In a blender, combine the chopped cucumbers, avocados, Greek yogurt, chilled vegetable broth, lime juice, olive oil, minced garlic, and dill.

      Season: Blend until smooth and creamy. Taste the mixture and add salt and pepper as desired. If the soup is too thick, you can add a little extra vegetable broth to reach your desired consistency.
