Creamy Crack Chicken Noodle Soup

Ingredients
  

1 lb (450g) boneless, skinless chicken breasts

4 cups (960ml) chicken broth

1 cup (240ml) heavy cream

1 packet (1 oz) ranch dressing mix

1 cup (150g) frozen peas

1 cup (150g) diced carrots

1 cup (150g) corn (fresh or frozen)

1 onion, finely chopped

3 cloves garlic, minced

8 oz (225g) egg noodles

1/2 cup (120ml) cream cheese, softened

2 tbsp olive oil

Salt and pepper to taste

2 tbsp fresh parsley, chopped (for garnish)

Optional: crispy bacon bits for topping

Instructions
 

Cook the Chicken: In a large pot, heat the olive oil over medium heat. Add the chicken breasts and sear for about 5-6 minutes on each side until golden brown. Remove from the pot and set aside to cool slightly.

    Sauté Vegetables: In the same pot, add the chopped onion and garlic. Sauté for about 2-3 minutes until fragrant and translucent. Add the diced carrots and cook for an additional 3-4 minutes.

      Add Broth and Seasonings: Pour in the chicken broth and add the ranch dressing mix. Stir well to combine. Bring the mixture to a gentle simmer.

        Shred the Chicken: While waiting for the broth to simmer, shred the seared chicken using two forks and return it to the pot.

          Add Cream and Noodles: Stir in the heavy cream and cream cheese, allowing them to melt and combine with the broth. Add the egg noodles and cook for about 7-8 minutes or until the noodles are tender.

            Combine Remaining Ingredients: Stir in the frozen peas and corn, cooking for another 2-3 minutes until heated through. Season with salt and pepper to taste.

              Serve: Ladle the soup into bowls. Garnish with chopped parsley and optional crispy bacon bits if desired.
