4 cups fresh corn kernels (or frozen)

2 large potatoes, diced (Yukon Gold or Russet)

1 small onion, finely chopped

2 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream (or coconut cream for a dairy-free version)

1 tsp thyme (fresh or dried)

1 tsp smoked paprika

Salt and pepper to taste

2 tbsp olive oil or butter

½ cup diced bell pepper (optional for added color)

Fresh chives or parsley, for garnish

Sauté the Base: In a large stockpot, heat the olive oil or butter over medium heat. Add the chopped onion and bell pepper (if using), and sauté until softened, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Cook the Potatoes: Stir in the diced potatoes, corn kernels, thyme, smoked paprika, salt, and pepper. Mix well to combine all the flavors.

      Add Broth: Pour in the vegetable broth and bring to a simmer. Cover the pot and let it cook for about 15-20 minutes, or until the potatoes are tender.

        Blend the Chowder (Optional): For a creamier texture, you can use an immersion blender to puree a portion of the chowder. Alternatively, transfer about half of the chowder to a regular blender, blend until smooth, and return it to the pot. Be cautious with hot liquids!

          Incorporate Cream: Stir in the heavy cream (or coconut cream) and allow the chowder to heat through, about 5 more minutes. Adjust the seasoning with additional salt and pepper if needed.
