Creamy Chicken Taco Casserole

2 cups cooked chicken, shredded (can use rotisserie chicken)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) sweet corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet (1 oz) taco seasoning mix

1 cup sour cream

1 cup cream cheese, softened

2 cups shredded cheddar cheese, divided

1 cup tortilla chips, crushed

1/2 cup green onions, chopped (for garnish)

Fresh cilantro, for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.

    Prepare Chicken Mixture: In a large bowl, combine the shredded chicken, black beans, sweet corn, diced tomatoes with green chilies, and taco seasoning mix. Stir until well combined.

      Make Creamy Base: In another bowl, mix together the sour cream and softened cream cheese until smooth. Add half of the cheddar cheese (1 cup) to this mixture and stir well.

        Combine: Gently fold the creamy mixture into the chicken mixture until everything is evenly coated.

          Layer in Baking Dish: Pour half of the crushed tortilla chips into the bottom of the prepared baking dish. Spread the chicken and cream mixture over the chips. Sprinkle the remaining crushed tortilla chips on top.

            Add Cheese: Top the casserole with the remaining 1 cup of shredded cheddar cheese.
