Ingredients

1 lb chicken sausage, sliced (Italian or any favorite flavor)

1 cup orzo pasta

2 cups chicken broth

1 cup heavy cream

1 cup baby spinach

1 small onion, diced

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving)

Instructions

Prepare the Base: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.

Cook the Sausage: Add the sliced chicken sausage to the skillet and cook until browned and heated through, about 5-6 minutes. Stir occasionally to ensure even cooking.

Add Orzo and Broth: Stir in the orzo pasta and Italian seasoning, allowing it to toast slightly for about 2 minutes. Then, pour in the chicken broth. Bring the mixture to a boil, then reduce to a gentle simmer.

Simmer Together: Cover the skillet and cook for about 10-12 minutes, or until the orzo is al dente, stirring occasionally to prevent sticking. If the mixture becomes too thick, you can add a splash more broth or water.

Make it Creamy: Once the orzo is cooked, stir in the heavy cream, cherry tomatoes, baby spinach, and red pepper flakes if using. Season with salt and pepper to taste. Cook for an additional 2-3 minutes until the spinach wilts and everything is heated through.

Serve: Remove from heat and garnish with chopped fresh parsley and a generous sprinkle of grated Parmesan cheese. Serve immediately and enjoy!
