12 ounces penne pasta

1 tablespoon olive oil

1 pound boneless, skinless chicken breasts, diced

3 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

4 cups fresh spinach (or 2 cups frozen, thawed and drained)

1 cup cherry tomatoes, halved

2 cups heavy cream

1 cup chicken broth

1 1/2 cups grated mozzarella cheese, divided

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh basil or parsley, for garnish

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

      Sauté Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken and season with salt, pepper, Italian seasoning, and red pepper flakes (if using). Cook until the chicken is browned and cooked through, about 6-8 minutes. Add the minced garlic and cook for another minute until fragrant.

        Add Spinach and Tomatoes: Stir in the fresh spinach and cherry tomatoes. Cook until the spinach is wilted, about 2-3 minutes. Remove from heat.

          Make the Sauce: In a bowl, whisk together the heavy cream and chicken broth. Add half of the mozzarella and all of the Parmesan cheese. Season with salt and pepper to taste.
