Creamy Chicken and Rice Bake

1 lb (450g) boneless, skinless chicken breasts, cubed

1 cup uncooked long-grain white rice

2 cups chicken broth

1 cup heavy cream

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup frozen peas and carrots mix

1 tsp dried thyme

1 tsp dried parsley

1/2 tsp paprika

Salt and pepper to taste

1 cup grated cheddar cheese

2 tbsp olive oil

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Chicken: In a large skillet, heat olive oil over medium heat. Add cubed chicken and season with salt, pepper, and paprika. Cook until browned, about 5-7 minutes. Remove chicken from skillet and set aside.

      Cook Aromatics: In the same skillet, add chopped onion and garlic. Sauté until the onion is translucent and fragrant, about 3-4 minutes.

        Combine Ingredients: In a large mixing bowl, combine the sautéed chicken, uncooked rice, chicken broth, heavy cream, frozen peas and carrots, thyme, and parsley. Stir well to combine everything evenly.

          Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish and spread it out evenly.

            Add Cheese: Sprinkle the grated cheddar cheese evenly over the top of the chicken and rice mixture.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Then remove the foil and bake for an additional 15-20 minutes, or until the rice is tender and the cheese is bubbly and golden.

                Serve: Once baked, let it cool for about 5 minutes. Garnish with fresh parsley if desired, and serve warm.
