Creamy Chicken and Broccoli Skillet Bake

2 cups boneless, skinless chicken breasts, diced

2 cups fresh broccoli florets

1 cup uncooked quinoa (or brown rice)

1 medium onion, chopped

2 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the diced chicken breasts. Season with salt, pepper, basil, and oregano. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.

    Cook the Aromatics: In the same skillet, add the chopped onion and garlic. Sauté for about 3-4 minutes until the onion becomes translucent and fragrant.

      Add Broccoli and Quinoa: Add the broccoli florets to the skillet and stir for another minute. Then, add the uncooked quinoa (or brown rice) and chicken broth. Bring to a simmer, cover, and cook for about 15 minutes, or until the quinoa (or rice) is fully cooked and the liquid is absorbed.

        Make it Creamy: Stir in the heavy cream and half of the mozzarella and Parmesan cheeses into the skillet. Return the cooked chicken to the skillet. Mix everything together until well combined. Adjust seasoning with additional salt and pepper if needed.

          Cheesy Topping: Sprinkle the remaining mozzarella and Parmesan cheeses over the top. Cover the skillet and reduce the heat to low. Let it cook for an additional 5 minutes, allowing the cheese to melt and create a creamy topping.
