1 medium head of cauliflower, cut into florets

8 oz elbow macaroni (or pasta of your choice)

1 cup sharp cheddar cheese, shredded

1/2 cup mozzarella cheese, shredded

1/2 cup cream cheese, softened

2 cups milk (preferably whole or 2%)

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon mustard powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup grated Parmesan cheese

2 tablespoons butter

1/2 cup breadcrumbs (optional for topping)

Prepare the Cauliflower: In a large pot, bring salted water to a boil. Add the cauliflower florets and cook for about 5-7 minutes until tender but not mushy. Drain and set aside.

    Cook the Pasta: In the same pot, cook the elbow macaroni according to package instructions until al dente. Drain and set aside, drizzling a little olive oil to prevent sticking.

      Make the Cheese Sauce: In a large saucepan over medium heat, melt the butter. Add the flour and whisk continuously for about 1-2 minutes to create a roux.

        Combine Ingredients: Slowly add the milk to the roux, whisking constantly to avoid lumps. Once combined, add the garlic powder, onion powder, mustard powder, smoked paprika, salt, and pepper. Continue to whisk until the sauce thickens (about 5-7 minutes).

          Cheese It Up: Lower the heat and stir in the cream cheese until fully incorporated. Gradually add in the shredded cheddar and mozzarella cheeses, stirring until melted and smooth.

            Blend in the Cauliflower: Using a blender or food processor, blend the cooked cauliflower until smooth. Stir the cauliflower puree into the cheese sauce until fully combined.

              Combine Sauce and Pasta: Add the cooked macaroni to the cheese sauce, stir well to ensure every piece is coated in the creamy goodness.

                Prepare for Baking: If you'd like a crispy topping, transfer the mac and cheese to a baking dish, sprinkle with breadcrumbs and the grated Parmesan cheese.

                  Bake: Preheat your oven to 350°F (175°C), and bake for about 25-30 minutes until heated through and the top is golden and crispy.
