Creamy Cauliflower Mac & Cheese

1 medium head of cauliflower, cut into florets

8 ounces elbow macaroni or gluten-free pasta

2 tablespoons unsalted butter

2 tablespoons all-purpose flour (or gluten-free flour)

2 cups whole milk (or almond milk for a dairy-free option)

1 teaspoon Dijon mustard

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon smoked paprika

2 cups shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Cauliflower and Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. In the last 2-3 minutes of pasta cooking, add the cauliflower florets to the pot. Drain the pasta and cauliflower together, and set aside.

    Make the Cheese Sauce: In the same pot, melt the butter over medium heat. Once melted, whisk in the flour to create a roux; cook for about 1 minute until golden. Slowly pour in the milk while whisking constantly to avoid lumps, and bring to a simmer.

      Season and Thicken: Stir in the Dijon mustard, garlic powder, onion powder, smoked paprika, salt, and pepper to taste. Continue to whisk until the mixture thickens, about 3-4 minutes.

        Add Cheese: Once the sauce is thickened, reduce heat to low and add the shredded cheddar and Parmesan cheese, stirring until completely melted and smooth.

          Combine: Pour the drained pasta and cauliflower into the cheese sauce, stirring gently to coat everything evenly.

            Serve Hot: Transfer to a serving dish or individual bowls, garnish with fresh chopped parsley, and enjoy your creamy delight right away!
