4 cups vegetable broth

1 teaspoon ground cumin (optional)

Fresh cilantro or parsley for garnish (optional)

Sauté the Aromatics: In a large saucepan, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until the onions are translucent. Add the garlic and grated ginger, and sauté for an additional 1-2 minutes until fragrant.

    Cook the Carrots: Add the chopped carrots to the saucepan and stir to combine. Cook for another 5 minutes, allowing the carrots to soften slightly.

      Add Broth: Pour in the vegetable broth, stir in the ground cumin (if using), and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 20 minutes, or until the carrots are tender.
