1 lb large shrimp, peeled and deveined

4 slices bacon, diced

1 medium onion, chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

2 medium potatoes, peeled and cubed

3 cups chicken broth

1 cup heavy cream

2 tbsp Cajun seasoning (adjust to taste)

1 tsp smoked paprika

Salt and pepper, to taste

2 tbsp olive oil

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Bacon: In a large pot, heat the olive oil over medium heat. Add the diced bacon and cook until crispy. Remove the bacon and set aside, leaving the drippings in the pot.

    Sauté Vegetables: In the same pot with the bacon drippings, add the chopped onion and sauté for about 4-5 minutes until softened. Add the minced garlic, red bell pepper, and green bell pepper. Cook for another 3-4 minutes until the vegetables are tender.

      Add Potatoes and Broth: Stir in the cubed potatoes, chicken broth, Cajun seasoning, and smoked paprika. Bring the mixture to a boil.

        Simmer: Once boiling, reduce the heat to low and let it simmer for about 15-20 minutes or until the potatoes are tender.

          Incorporate Shrimp and Cream: Add the peeled and deveined shrimp to the pot, cooking until they turn pink (about 3-5 minutes). Then, stir in the heavy cream and season with salt and pepper to taste. Heat through but do not let it boil.

            Finish and Serve: Once the chowder is creamy and heated, stir in the reserved cooked bacon. Serve hot, garnished with sliced green onions and chopped parsley.
