Creamy Cajun Sausage Pasta

12 oz fettuccine or penne pasta

1 lb smoked sausage (Andouille or Chorizo), sliced

1 medium onion, chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 cup heavy cream

1 cup chicken broth

1 cup shredded cheddar cheese

1 tbsp Cajun seasoning

1 tsp paprika

Salt and pepper, to taste

2 tbsp olive oil

2 green onions, chopped (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine or penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté the Sausage: In a large skillet over medium heat, add the olive oil. Once hot, add the sliced sausage and cook until browned, about 5-7 minutes. Remove the sausage and set aside, leaving the drippings in the skillet.

      Cook the Vegetables: In the same skillet, add the chopped onion, red bell pepper, and green bell pepper. Sauté for about 5 minutes, or until the vegetables are soft. Add the minced garlic and sauté for another minute until fragrant.

        Make the Sauce: Pour in the chicken broth and bring to a simmer. Add the heavy cream, Cajun seasoning, paprika, salt, and pepper. Stir to combine and let the sauce simmer for about 5 minutes until it's slightly thickened.

          Combine Ingredients: Stir in the shredded cheddar cheese until melted and smooth. Add the cooked sausage and drained pasta, tossing everything together to coat well in the creamy sauce.

            Finish the Dish: Allow the pasta to heat through for another 2 minutes. Adjust seasoning with more salt and pepper, if needed.

              Garnish and Serve: Remove from heat. Garnish with chopped green onions and parsley before serving. Enjoy!
