1 cup orzo pasta

2 cups broccoli florets

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

3 cups vegetable broth (or chicken broth)

1 cup heavy cream

1 ½ cups shredded sharp cheddar cheese, divided

¼ teaspoon nutmeg

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Cook the Orzo: In a large pot, bring salted water to a boil. Add the orzo pasta and cook according to package instructions until al dente (about 8-10 minutes). During the last 2 minutes of cooking, add the broccoli florets. Drain and set aside.

    Sauté Aromatics: In the same pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 4-5 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant.

      Create the Cream Sauce: Pour in the vegetable or chicken broth and bring to a gentle simmer. Stir in the heavy cream and nutmeg, allowing the mixture to heat through for about 2-3 minutes.

        Incorporate Cheese: Gradually add 1 cup of the shredded cheddar cheese to the pot, stirring constantly until melted and smooth. Season the cream sauce with salt and pepper to taste.

          Combine Orzo and Broccoli: Add the cooked orzo pasta and broccoli to the sauce, stirring well to combine. If the orzo looks too thick, you can thin it out with a bit more broth or water until you reach your desired consistency.

            Finish and Serve: Remove the pot from heat and sprinkle the remaining shredded cheddar on top. Let it sit for a minute, allowing the cheese to melt slightly. Garnish with chopped parsley and serve warm.
