4 cups fresh broccoli florets

1 cup cooked quinoa (or rice)

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1 cup cream cheese, softened

1 cup milk

1/2 cup sour cream

2 tablespoons butter

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon mustard powder

1/2 teaspoon black pepper

1/2 teaspoon salt

1/4 teaspoon cayenne pepper (optional for heat)

1 cup breadcrumbs (panko for extra crunch)

Fresh parsley for garnish (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Blanch the Broccoli: In a large pot, bring salted water to a boil. Add the broccoli florets and blanch for about 2 minutes until they are bright green. Drain and transfer to an ice bath to stop the cooking. Once cooled, drain again and set aside.

      Prepare the Cheese Sauce: In a medium saucepan over medium heat, melt the butter. Whisk in the softened cream cheese, milk, and sour cream until smooth. Stir in the garlic powder, onion powder, mustard powder, black pepper, salt, and cayenne pepper (if using). Cook until the sauce is heated through and creamy, about 5 minutes.

        Combine the Ingredients: In a large mixing bowl, combine the blanched broccoli, cooked quinoa, half of the shredded cheddar cheese, and half of the grated Parmesan cheese. Pour the cheese sauce over the mixture and stir until everything is well coated.

          Transfer to Baking Dish: Grease a 9x13-inch baking dish or similar-sized casserole dish. Pour the broccoli and cheese mixture into the dish, spreading it evenly.

            Top with Cheese and Breadcrumbs: Sprinkle the remaining cheddar and Parmesan cheeses evenly over the top. Then, add the breadcrumbs in an even layer on top of the cheese.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes or until the top is golden brown and bubbly.
