8 oz fettuccine or pasta of choice

4 strips of thick-cut bacon, chopped

3 cups fresh spinach, roughly chopped

2 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and freshly cracked black pepper, to taste

2 tbsp olive oil

1/4 tsp red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Remove the bacon from the skillet and set it on a plate lined with paper towels to drain excess grease.

      Sauté Spinach and Garlic: In the same skillet, remove excess bacon grease, leaving about 1 tablespoon. Add olive oil if needed. Add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the chopped spinach and cook until wilted, about 2-3 minutes.

        Make the Alfredo Sauce: Lower the heat and pour in the heavy cream. Stir well and bring it to a gentle simmer. Add the grated Parmesan cheese, Italian seasoning, salt, freshly cracked black pepper, and red pepper flakes (if using). Stir continuously until the cheese melts and the sauce thickens slightly, about 3-5 minutes.

          Combine Pasta and Sauce: Add the drained pasta to the skillet, tossing it gently to coat in the creamy sauce. If the sauce is too thick, slowly add in the reserved pasta water a little at a time until you reach your desired consistency.

            Add Bacon and Serve: Stir in the cooked bacon, mixing it evenly in the pasta. Taste and adjust seasoning as necessary. Serve immediately, garnished with fresh parsley.
