4 bone-in pork chops (about 1 inch thick)

6 slices of bacon, diced

1 cup heavy cream

1 cup chicken broth

1 small onion, finely chopped

3 garlic cloves, minced

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prepare the Pork Chops: Season both sides of the pork chops with salt, pepper, and smoked paprika. Allow them to sit at room temperature for about 20 minutes to enhance their flavor.

    Cook the Bacon: In a large skillet over medium heat, add the diced bacon. Cook until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and place it on a paper towel-lined plate, leaving the drippings in the skillet.

      Sear the Pork Chops: In the same skillet, add olive oil if needed, then place the pork chops in the skillet. Sear them for about 4-5 minutes on each side or until they are nicely browned and cooked through (internal temperature should reach 145°F). Remove the chops from the skillet and set aside.

        Sauté the Aromatics: In the same skillet, add the chopped onion and cook for about 3-4 minutes until translucent. Add the minced garlic and thyme, and cook for an additional minute until fragrant.

          Make the Creamy Sauce: Pour in the chicken broth and bring it to a simmer. Scrape the bottom of the skillet to deglaze it and incorporate the flavors. Once simmering, reduce the heat to low, and stir in the heavy cream. Let the sauce simmer for 5 minutes until it thickens slightly.
