12 oz (340g) spaghetti or linguine

2 ripe avocados, pitted and peeled

1/4 cup fresh lime juice (about 2-3 limes)

2 cloves garlic, minced

1/2 cup fresh basil leaves, packed

1/4 cup olive oil

1/2 cup grated Parmesan cheese (plus extra for serving)

Salt and pepper to taste

1/4 teaspoon crushed red pepper flakes (optional)

1 cup cherry tomatoes, halved

Fresh lime wedges for serving

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti or linguine according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
