12 ounces pasta (spaghetti or linguine works well)

2 ripe avocados, pitted and peeled

1/2 cup fresh basil leaves, packed

2 cloves garlic, minced

1/4 cup freshly squeezed lime juice (about 2 limes)

1/4 cup olive oil

1/2 cup grated Parmesan cheese (plus extra for serving)

Salt and black pepper to taste

Zest of 1 lime

1 cup cherry tomatoes, halved (for garnish)

Fresh cilantro (for garnish, optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Make the Avocado Sauce: In a blender or food processor, combine the avocados, basil, garlic, lime juice, olive oil, Parmesan cheese, lime zest, salt, and pepper. Blend until smooth and creamy. If the sauce is too thick, gradually add in some of the reserved pasta water until you reach the desired consistency.

      Combine Pasta and Sauce: In a large mixing bowl, toss the cooked pasta with the creamy avocado sauce until well coated. If needed, add additional reserved pasta water to help the sauce adhere better.

        Serve: Plate the pasta and top with halved cherry tomatoes and more grated Parmesan cheese. Garnish with fresh cilantro if desired.
