Cranberry Maple Glazed Meatloaf

For the meatloaf:

1 ½ lbs ground beef (or turkey)

1 cup breadcrumbs (preferably whole grain or panko)

1 small onion, finely diced

2 cloves garlic, minced

1 large egg

¼ cup milk

2 tablespoons Worcestershire sauce

2 teaspoons dried thyme

1 teaspoon salt

½ teaspoon black pepper

½ cup fresh parsley, chopped

For the cranberry maple glaze:

1 cup fresh or frozen cranberries (if using frozen, do not thaw)

½ cup pure maple syrup

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

1 teaspoon cinnamon

A pinch of salt

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Meatloaf Mixture:

      - In a large mixing bowl, combine the ground beef (or turkey), breadcrumbs, diced onion, minced garlic, egg, milk, Worcestershire sauce, thyme, salt, pepper, and parsley.

        - Mix everything gently but thoroughly until well combined, taking care not to overmix.

          Shape the Meatloaf:

            - Transfer the meat mixture to a loaf pan (or shape it freeform on a lined baking sheet). Press it down to ensure it holds its shape while baking.

              Make the Cranberry Maple Glaze:

                - In a small saucepan over medium heat, combine the cranberries, maple syrup, apple cider vinegar, Dijon mustard, cinnamon, and pinch of salt.

                  - Stir the mixture and simmer until the cranberries pop and the sauce thickens slightly, about 8-10 minutes. Remove from heat.

                    Glaze the Meatloaf:

                      - After the meatloaf has baked for 30 minutes, remove it from the oven and brush half of the cranberry maple glaze on top. Return to the oven to bake for an additional 25-30 minutes, or until the meatloaf reaches an internal temperature of 160°F (70°C).

                        Finish and Serve:

                          - Once done, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing. Drizzle the remaining glaze on top or serve it on the side.
