Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or line it with parchment paper for easy removal.

Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until well combined. Set aside.

Mix Sugars and Wet Ingredients: In a large mixing bowl, combine the granulated sugar, brown sugar, and vegetable oil. Beat using an electric mixer on medium speed until smooth. Add the eggs, pumpkin puree, and vanilla extract, mixing until fully incorporated.

Combine Wet and Dry Mixtures: Gradually add the dry ingredient mixture to the wet ingredients. Mix on low speed until just combined, being careful not to overmix. If desired, fold in chopped walnuts.

Pour into the Pan: Pour the batter into the prepared baking pan, spreading it evenly.

Bake: Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Cool the Cake: Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.

Make the Cinnamon Cream: In a medium mixing bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar, vanilla extract, and ground cinnamon while continuing to whip until stiff peaks form.

Frost and Serve: Once the cake is completely cooled, spread a generous layer of cinnamon cream on top. Optionally, garnish with additional chopped walnuts and a sprinkle of cinnamon.

Enjoy: Slice and serve the Cozy Pumpkin Spice Cake with a dollop of remaining cinnamon cream on the side for extra indulgence!
