1 sheet of puff pastry (thawed if frozen)

6 slices of thick-cut bacon, diced

1 small onion, finely chopped

2 cloves garlic, minced

4 oz blue cheese, crumbled

1 cup heavy cream

2 large eggs

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Salt and pepper, to taste

1 egg (for egg wash)

Chopped chives, for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Cook the Bacon: In a medium skillet over medium heat, cook the diced bacon until crispy. Use a slotted spoon to transfer the bacon to a paper towel-lined plate, leaving the bacon fat in the pan.

      Sauté the Aromatics: In the same skillet, add the finely chopped onion and sauté until soft and translucent, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant. Remove from heat and let cool slightly.

        Prepare the Tartlet Shells: Roll out the puff pastry on a floured surface to about 1/4 inch thickness. Use a round cutter (around 4 inches in diameter) to cut out circles of pastry. Gently press each circle into the cups of a muffin tin to form tartlet shells.

          Mix the Filling: In a medium bowl, whisk together the heavy cream, eggs, thyme, salt, and pepper. Stir in the sautéed onion and garlic, cooked bacon, and crumbled blue cheese until well combined.

            Fill the Tartlets: Carefully pour the mixture into each puff pastry shell, filling them about 3/4 full to allow for rising.

              Egg Wash: Beat the additional egg and brush it over the edges of the pastry shells for a golden finish.

                Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes or until the pastry is golden and the filling is set.

                  Cool and Serve: Remove from the oven and let cool for a few minutes before carefully releasing the tartlets from the muffin tin. Garnish with fresh chives if desired, and serve warm.
