1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained (or 1 ½ cups fresh corn, cooked)

1 medium red bell pepper, diced

1 medium green bell pepper, diced

1 medium red onion, finely chopped

1 jalapeño pepper, seeded and minced (adjust for heat preference)

1 cup cherry tomatoes, halved

½ cup fresh cilantro, chopped

1 avocado, diced (optional)

Juice of 2 limes

¼ cup olive oil

2 teaspoons ground cumin

Salt and pepper to taste

Tortilla chips (for serving)

Instructions
 

In a large mixing bowl, combine the black beans, corn, red and green bell peppers, red onion, jalapeño, and cherry tomatoes.

    Gently fold in the chopped cilantro and avocado (if using).

      In a separate small bowl, whisk together the lime juice, olive oil, ground cumin, salt, and pepper until well mixed.

        Pour the dressing over the bean mixture and toss gently to combine, ensuring all ingredients are well coated with the dressing.

          Taste the Cowboy Caviar and adjust the seasoning to your preference, adding more lime juice, salt, or pepper as needed.
