Ingredients

1 cup cottage cheese (drained if excess liquid)

1 cup all-purpose flour (plus extra for dusting)

1/2 tsp baking powder

1/2 tsp salt

1 tbsp olive oil (plus more for cooking)

1/2 tsp garlic powder (optional for flavor)

Fresh herbs (like dill or chives), finely chopped (optional)

Water (as needed for dough consistency)

Instructions

Mix the Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and garlic powder (if using). Stir well to ensure everything is evenly distributed.

Add Cottage Cheese: Stir in the cottage cheese using a fork or a spatula until the mixture starts to come together.

Knead the Dough: Transfer the mixture onto a floured surface. If the dough is too sticky, sprinkle a little extra flour. Knead gently for about 2-3 minutes until a soft dough forms. If it feels too dry, add a teaspoon of water at a time until you reach the desired consistency.

Incorporate Oil and Herbs: Create a little well in the center of the dough, pour in the olive oil, and add the chopped herbs (if using). Knead again briefly until the oil and herbs are combined into the dough.

Rest the Dough: Cover the dough with a kitchen towel or plastic wrap and let it rest for about 15-20 minutes. This will help relax the gluten.

Shape the Flatbreads: Divide the dough into 4 equal portions. On a lightly floured surface, roll each portion into a circle about 1/4 inch thick. If the dough sticks, sprinkle a little more flour on both the surface and the dough.

Cook the Flatbreads: Heat a non-stick skillet or frying pan over medium heat. Add a drizzle of olive oil. Once hot, place one flatbread in the pan. Cook for about 2-3 minutes on each side until golden brown and slightly puffed. Repeat with the remaining flatbreads, adding more oil as necessary.

Serve and Enjoy: Serve warm with your favorite dips, spreads, or as a base for wraps. Enjoy your flavorful and protein-packed cottage cheese flatbreads!
