Corn & Avocado Salad with Honey Lime Dressing

Ingredients
  

2 cups fresh corn kernels (about 3-4 ears of corn)

1 large ripe avocado, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1 cup cucumber, diced

1/4 cup fresh cilantro, chopped

1 jalapeño, seeded and minced (optional for heat)

Juice of 2 limes

2 tablespoons honey

3 tablespoons olive oil

Salt and pepper to taste

Prepare the Corn: If using fresh corn, bring a pot of salted water to a boil. Add the corn ears and cook for 3-4 minutes until tender. Remove, cool, and slice off the kernels. If using canned or frozen corn, skip this step and simply rinse or cook according to package instructions.

    Mix the Vegetables: In a large mixing bowl, combine the corn kernels, diced avocado, cherry tomatoes, red onion, cucumber, cilantro, and jalapeño (if using). Gently toss the ingredients to combine.

      Make the Dressing: In a small bowl, whisk together the lime juice, honey, and olive oil until well combined. Season with salt and pepper to taste.

        Combine Salad and Dressing: Pour the honey lime dressing over the salad mixture and gently toss until everything is evenly coated.

          Taste and Adjust: Sample the salad and adjust the seasoning if necessary by adding more salt, pepper, or lime juice according to your preference.
