To achieve the perfect broccoli for your casserole, it’s essential to cook it properly to maintain its vibrant green color and satisfying crunch. Start by bringing a medium-sized pot of salted water to a boil. Once boiling, add the broccoli florets and allow them to cook for just 2-3 minutes. This quick blanching process helps to set the bright green color and keeps the florets tender yet crisp. After the time is up, immediately transfer the broccoli to an ice bath (a bowl filled with ice water) to halt the cooking process. This technique ensures that the broccoli retains its beautiful color and crunchiness, making it an excellent addition to your casserole.

Ingredients

2 cups cooked chicken, shredded

2 cups broccoli florets (fresh or frozen)

1 cup uncooked brown rice

2 cups vegetable or chicken broth

1 cup shredded sharp cheddar cheese

1 cup milk (or a dairy-free alternative)

1 cup cream of mushroom soup (homemade or canned)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon paprika (optional)

½ cup breadcrumbs (for topping)

2 tablespoons olive oil (for drizzling)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch casserole dish with non-stick spray or olive oil.

Cook the Broccoli: If using fresh broccoli, steam or blanch the florets for about 3-4 minutes until vibrant and tender-crisp. If using frozen broccoli, thaw and drain excess water.

Combine Ingredients: In a large mixing bowl, combine the shredded chicken, cooked broccoli, uncooked brown rice, broth, milk, cream of mushroom soup, garlic powder, onion powder, salt, black pepper, and paprika. Mix until well blended.

Add Cheese: Fold in ¾ cup of the shredded cheddar cheese into the mixture, ensuring it is evenly distributed.

Transfer to Casserole Dish: Pour the chicken and broccoli mixture into the prepared casserole dish, spreading it out evenly.

Prepare Topping: In a small bowl, combine the breadcrumbs with a drizzle of olive oil. Mix well until the breadcrumbs are slightly moistened. Sprinkle the breadcrumbs evenly over the casserole.

Add Remaining Cheese: Finally, sprinkle the remaining ¼ cup of shredded cheddar cheese over the breadcrumbs for a cheesy, golden topping.

Bake: Cover the casserole dish with aluminum foil (to prevent excess browning) and bake for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the casserole is bubbly and the top is golden brown.

Garnish: Once baked, let the casserole sit for about 5 minutes. Garnish with fresh chopped parsley before serving.

Serve: Portion out the casserole onto plates and enjoy the comforting flavors of this Cheddar and Broccoli Chicken Casserole!
