Cold Tuna Pasta Salad

8 oz (225 g) rotini or fusilli pasta

1 can (15 oz/425 g) tuna in olive oil, drained and flaked

1 cup cherry tomatoes, halved

1/2 cup cucumber, diced

1/4 cup red onion, finely chopped

1/2 cup black olives, sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

3 tbsp extra virgin olive oil

2 tbsp red wine vinegar

1 tsp dried oregano

1 clove garlic, minced

Salt and pepper to taste

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool.

    Prepare the Vegetables: While the pasta is cooking, chop the cherry tomatoes, cucumber, red onion, and slice the black olives.

      Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, dried oregano, salt, and pepper until well combined.
