8 oz rice noodles (or your choice of noodles)

1/2 cup creamy peanut butter

3 tbsp soy sauce

2 tbsp rice vinegar

1 tbsp sesame oil

2 tbsp honey or maple syrup (for a vegan option)

2-3 cloves garlic, minced

1-2 tsp sriracha (adjust to taste)

2-3 tbsp warm water (to thin sauce as needed)

Vegetables:

1 red bell pepper, thinly sliced

1 small cucumber, julienned

2 carrots, grated or julienned

1 cup bean sprouts

3 green onions, sliced

1 cup fresh cilantro, chopped

Garnishes:

Chopped peanuts

Lime wedges

Extra cilantro for topping

Sesame seeds (optional)

Cook the Noodles: Bring a large pot of salted water to a boil. Add the rice noodles and cook according to package instructions, typically about 4-6 minutes. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.
