8 oz rotini pasta

1 cup fresh spinach, chopped

1 cup artichoke hearts, canned or frozen, drained and chopped

1/2 cup red bell pepper, diced

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/2 cup mozzarella cheese, cubed

1/2 cup mayonnaise

1/4 cup Greek yogurt

1 tablespoon lemon juice

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool the pasta down. Set aside.

    Prepare the Dressing: In a separate mixing bowl, combine the mayonnaise, Greek yogurt, lemon juice, garlic powder, salt, black pepper, and crushed red pepper flakes. Whisk together until smooth and creamy.

      Combine the Ingredients: In a large mixing bowl, add the cooled pasta, chopped spinach, artichoke hearts, red bell pepper, cherry tomatoes, red onion, and mozzarella cheese. Gently toss to combine.
