2 cups cooked chicken breast, shredded

1 cup black beans, rinsed and drained

1 cup sweet corn, drained (canned or frozen)

1 red bell pepper, diced

1 avocado, diced

1/4 cup red onion, finely chopped

1/3 cup fresh cilantro, chopped

Juice of 2 limes

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper, to taste

4 large whole wheat tortillas or flour tortillas

1 cup Greek yogurt or sour cream (for a creamy dressing)

Optional: ½ cup shredded cheese (Cheddar or Monterey Jack)

Instructions
 

In a large mixing bowl, combine the shredded chicken, black beans, sweet corn, diced red bell pepper, avocado, red onion, and cilantro.

    In a separate small bowl, mix together the lime juice, cumin, chili powder, salt, and pepper to create a dressing.

      Pour the dressing over the chicken mixture and toss well to ensure all ingredients are coated evenly.

        If you’re using shredded cheese, add it to the chicken salad and mix gently.

          Lay out a tortilla on a clean surface. Spoon a generous portion of the chicken salad mixture onto the center of the tortilla, leaving space along the edges.

            Fold in the sides of the tortilla, then roll it up tightly from the bottom to the top to form a wrap. Repeat with the remaining tortillas and filling.

              For serving, you can cut the wraps in half diagonally and secure them with toothpicks if desired.

                Serve immediately or refrigerate for up to 2 hours for a chilled salad wrap experience.
