Cold Peanut Sesame Noodles

8 oz. (225g) thin rice noodles or spaghetti

1/4 cup creamy peanut butter

3 tablespoons soy sauce (preferably low-sodium)

2 tablespoons sesame oil

1 tablespoon honey or maple syrup (for a vegan option)

1 tablespoon rice vinegar

1 teaspoon sriracha or chili paste (adjust for heat preference)

1 garlic clove, minced

1-inch piece of fresh ginger, grated

1/2 cup shredded carrots

1/2 cucumber, julienned

1 red bell pepper, thinly sliced

3 green onions, sliced (white and green parts separated)

1 tablespoon sesame seeds

Fresh cilantro or mint leaves, for garnish (optional)

Cook the Noodles: Bring a large pot of salted water to a boil. Add the rice noodles or spaghetti and cook according to package instructions until al dente. Drain and rinse under cold running water to stop the cooking process and cool down the noodles. Set aside.

    Make the Peanut Sauce: In a medium bowl, whisk together the creamy peanut butter, soy sauce, sesame oil, honey (or maple syrup), rice vinegar, sriracha, minced garlic, and grated ginger. Adjust the seasoning according to taste. If the sauce is too thick, add a tablespoon of warm water to reach your desired consistency.

      Combine Ingredients: In a large mixing bowl, add the cooled noodles, shredded carrots, julienned cucumber, sliced red bell pepper, and the white parts of the green onions. Pour the peanut sauce over the top and toss gently until the noodles and vegetables are well coated.
