Cold Couscous Chickpea Wraps

1 cup couscous

1 cup vegetable broth (or water)

1 can (15 oz) chickpeas, drained and rinsed

1/2 cup cherry tomatoes, halved

1/2 cucumber, diced

1/4 red onion, finely chopped

1/2 bell pepper (any color), diced

1/4 cup fresh parsley, chopped

2 tablespoons lemon juice

1 tablespoon olive oil

1 teaspoon ground cumin

Salt and pepper to taste

4 large whole wheat or spinach tortillas

1/2 cup hummus (optional, for spreading)

Mixed greens (optional, for filling)

Prepare the Couscous: In a medium saucepan, bring the vegetable broth or water to a boil. Add the couscous, stir, and remove from heat. Cover and let it sit for 5 minutes until the liquid is absorbed. Fluff with a fork and let it cool.

    Mix the Filling: In a large bowl, combine the cooled couscous, chickpeas, cherry tomatoes, cucumber, red onion, bell pepper, and parsley.

      Dress the Salad: In a small bowl, whisk together the lemon juice, olive oil, ground cumin, salt, and pepper. Pour over the couscous mixture and gently toss until all ingredients are well combined.

        Assemble the Wraps: Lay out a tortilla on a clean surface. If desired, spread a layer of hummus on the tortilla. Spoon the couscous and chickpea mixture onto the center of the tortilla, leaving space around the edges.

          Wrap it Up: Fold in the sides of the tortilla, then roll it tightly from the bottom up. Repeat with remaining tortillas and filling.

            Chill: Place the finished wraps in the refrigerator for at least 30 minutes to allow the flavors to meld and to serve cold.
