1 cup rolled oats

1 cup coconut milk (canned or carton)

½ cup Greek yogurt (or coconut yogurt for dairy-free option)

1 ripe mango, diced

2 tablespoons honey or maple syrup (optional, adjust for sweetness)

1 teaspoon vanilla extract

¼ teaspoon cinnamon

2 tablespoons shredded coconut (unsweetened)

Fresh mango slices and mint leaves for garnish

Instructions
 

In a large mixing bowl, combine the rolled oats, coconut milk, Greek yogurt, honey (or maple syrup), vanilla extract, and cinnamon. Stir until well combined.
