Ingredients

For the Meatloaf:

1 ½ pounds ground beef (80/20 blend)

1 cup breadcrumbs (plain or Italian-seasoned)

1 small onion, finely chopped

2 cloves garlic, minced

1 large egg

½ cup milk

1 tablespoon Worcestershire sauce

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

½ cup chopped fresh parsley (optional)

For the Tangy Glaze:

½ cup ketchup

2 tablespoons brown sugar

1 tablespoon apple cider vinegar

1 teaspoon mustard (yellow or Dijon)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). This allows it to be at the perfect temperature for baking.

Prepare the Meatloaf Mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, egg, milk, Worcestershire sauce, oregano, thyme, salt, and pepper. If you're using parsley, add it in for a fresh touch. Mix gently until just combined. Avoid over-mixing to keep your meatloaf tender.

Shape the Loaf: Transfer the meat mixture into a loaf pan. Shape it into a loaf form, ensuring it’s evenly spread. This helps it cook more uniformly.

Make the Tangy Glaze: In a separate small bowl, whisk together the ketchup, brown sugar, apple cider vinegar, and mustard until smooth. This will give your meatloaf that delicious tangy flavor.

Apply the Glaze: Carefully pour half of the tangy glaze over the formed meatloaf, spreading it evenly on top.

Bake the Meatloaf: Place the loaf pan in the preheated oven and bake for about 1 hour, or until the internal temperature reaches 160°F (70°C). If you prefer a slightly crispy top, bake for an additional 10 minutes uncovered.

Add More Glaze: Remove the meatloaf from the oven and brush the remaining glaze on top. Return it to the oven for another 10 minutes. This adds a delightful shine and sweetness to the crust.

Rest the Meatloaf: Once done, remove the meatloaf from the oven and let it rest for 10-15 minutes before slicing. This allows the juices to redistribute, making each slice moist.

Serve and Enjoy: Slice with a sharp knife and serve warm with your favorite sides, such as mashed potatoes and steamed vegetables.
