Cinnamon Sugar Donut Muffins

For the Muffins:

2 cups all-purpose flour

1 cup granulated sugar

2 tsp baking powder

1/2 tsp baking soda

1 tsp ground cinnamon

1/4 tsp nutmeg

1/2 tsp salt

1 large egg

3/4 cup milk (whole or almond)

1/2 cup unsalted butter, melted

1 tsp vanilla extract

For the Cinnamon Sugar Topping:

1/2 cup granulated sugar

2 tsp ground cinnamon

4 oz unsalted butter, melted (for dipping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with muffin liners.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

      Combine Wet Ingredients: In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract until smooth.

        Blend the Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Gently fold the mixture until just combined; be careful not to overmix. It’s okay if there are a few lumps!

          Fill Muffin Tins: Divide the batter evenly among the muffin tin, filling each well about 2/3 full.

            Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

              Prepare Cinnamon Sugar: While the muffins are baking, mix together the sugar and cinnamon in a small bowl.

                Coat with Butter and Sugar: As soon as the muffins are done baking, remove them from the oven and let them cool for 5 minutes in the pan. Then, carefully remove them from the tin. Dip the tops of each muffin into the melted butter, then roll them in the cinnamon sugar mixture until well coated.

                  Serve: Allow the donuts muffins to cool slightly on a wire rack or enjoy them warm while the sugar is still slightly melty.
