Ingredients

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

¼ cup granulated sugar

¼ cup packed brown sugar

1 large ripe banana, mashed (about ⅓ cup)

½ cup buttermilk (or milk mixed with 1 tsp lemon juice)

1 large egg

2 tbsp unsalted butter, melted

1 tsp vanilla extract

½ cup granulated sugar (for coating)

1 tbsp ground cinnamon (for coating)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a donut pan lightly with cooking spray or butter.

Whisk Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and 1 tsp cinnamon until well combined. Set aside.

Mix Sugars and Wet Ingredients: In a large mixing bowl, combine the granulated sugar, brown sugar, and mashed banana. Mix until smooth. Then add the buttermilk, egg, melted butter, and vanilla extract. Stir until combined.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, folding gently until just combined. Be careful not to overmix; a few lumps are okay.

Fill the Donut Pan: Transfer the batter to a piping bag or a resealable plastic bag with one corner snipped off. Fill each donut cavity about halfway (for a full donut without overflow).

Bake: Bake the donuts in the preheated oven for 10-12 minutes or until they are golden brown and a toothpick inserted in the center comes out clean.

Prepare Cinnamon Sugar: While the donuts are baking, prepare the cinnamon sugar coating. In a small bowl, combine ½ cup granulated sugar and 1 tbsp cinnamon and mix well.

Coat the Donuts: Once out of the oven, allow the donuts to cool in the pan for about 5 minutes. Then, gently remove the donuts and roll them in the cinnamon sugar mixture while they are still warm, ensuring they are well coated.

Serve: Allow the donuts to cool slightly on a wire rack before serving. Enjoy these delightful Cinnamon Sugar Banana Donuts warm or at room temperature!
