Cinnamon Cream Cheese Muffins

1 ½ cups all-purpose flour

1 tbsp baking powder

½ tsp baking soda

½ tsp salt

½ tsp ground cinnamon

¼ cup granulated sugar

½ cup brown sugar, packed

1 large egg

1 cup buttermilk (or milk with 1 tbsp lemon juice added)

⅓ cup vegetable oil

1 tsp pure vanilla extract

For the cream cheese filling:

8 oz cream cheese, softened

¼ cup powdered sugar

1 tsp vanilla extract

For the cinnamon sugar topping:

2 tbsp granulated sugar

1 tsp ground cinnamon

2 tbsp melted butter (for brushing tops)

Instructions
 

Preheat the Oven:

    Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with cooking spray.

      Prepare the Dry Ingredients:

        In a medium bowl, whisk together flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.

          Mix the Wet Ingredients:

            In a large bowl, whisk together the granulated sugar, brown sugar, and egg until smooth. Add the buttermilk, vegetable oil, and vanilla extract, stirring until fully combined.

              Combine Wet and Dry Ingredients:

                Gradually add the dry ingredient mixture to the wet ingredients, stirring just until moistened. Be careful not to overmix—the batter should be lumpy.

                  Prepare the Cream Cheese Filling:

                    In a separate bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth. Set aside.

                      Fill the Muffin Tin:

                        Spoon a small amount of muffin batter into each muffin cup, filling them about one-third full. Then, add a dollop of the cream cheese mixture on top of the batter, followed by another layer of muffin batter until the cups are about ¾ full.

                          Make the Cinnamon Sugar Topping:

                            In a small bowl, combine granulated sugar and ground cinnamon. Mix well.
